Stuffed Pepper Bake

I was craving stuffed peppers the other night but honestly was way to lazy to assemble them so I decided to dumb all the ingredients into a casserole dish and bake. Let me tell you, B told me it was one of his fave meals ever which says a lot since he is going through an anti-(most)veggies kick lately.

So here’s what you need for this super easy weeknight dinner:

  • meat of your choice — ground beef or ground turkey would be delish!

  • rice — we just used jasmine rice because we had it but any type you like will be good.

  • chop & sauté bell peppers — we always do yellow and orange.

  • chop & sauté onions.

  • diced tomatoes & drain the juice.

  • add any spices you like — we love garlic and italian seasoning with this dish.

  • add sour cream, green onions or hot sauce to the top if you like!

Once the veggies are sauté and the meat is fully cooked, pop everything into a casserole dish and mix in the can of diced tomatoes. We sprinkled cheese over the top and baked at 350 for about 10 minutes and voila la! All done!
