easy crockpot chicken fajitas
Let's be honest here, I've never really been into cooking. I hate recipes that use more than 10 ingredients and I hate anything that takes longer than an hour to prep and cook. I know some of you are reading this like WTH seriously?? But cooking is not something I like to do. I've never envisioned myself being excited to cook a big Thanksgiving dinner but I'll host the party and someone else can cook! Ha!
So all of my "recipes" are mega easy. I don't typically use my crock pot, I'm not sure why, I just don't think I am prepared enough to cook something 6 hours in advance. However I love doing chicken fajitas in the crockpot!! I hate cooking chicken and I just don't find baked chicken to be very good. Ok, lets get to the recipe.
+ Chicken breast (we typically do 2 and we always have leftovers) I will shred the chicken once its fully cooked
+ Frozen or fresh bell peppers + onions
+ Fajita seasoning
I usually cook this on high for 3-4 hours
Sometimes we do bowls with rice, guac, fresh tomatoes and fresh onions or we will do a tortilla! So easy!!
