A lot of my friends and family always ask me what I do when I go out of town for work. Usually it is a lot of touring hotels and convention centers however I also get to do some fun "work" stuff too. Yesterday we had our food tastings for our various social events that happen at our Annual Meeting.

We arrived at the catering offices in San Antonio and in for a treat! The food was amazing and I wanted to share all the items we tasted with you, especially you foodies out there!

Jalapeño Margarita

Prickly Pear Martini

Quail Bites
Marinated bites of quail and jalapeño slivers, wrapped in applewood smoked bacon, drizzled with buttermilk creme. 

Sesame Ahi Tuna
Seared sliced of sesame crusted ahi tuna with wasabi mayo, served on a slice of cucumber.

Miniature Beef Wellington
Tender marinated beef with sautéed mushrooms and sautéed spinach wrapped in a flaky puff pastry. 

Ravioli of Texas Autumn Squash
Citrus beurre blanc, toasted macadamia and fried sage. 

Butter Lettuce and Fine Herbs Salad
Roasted pepper jam, pine nuts and goat cheese crostini in a chardonnay vinaigrette.

Moral and Apple Chutney Stuffed Chicken

Filet of Beef and Seared Gulf Drum
Iron seared filet with caramelized onion demi glaze. Seared gulf drum accompanied by brussel sprouts, mushrooms and celery root puree.
